Chocolate Chip 'Pizza' Cookies

These cookies are packed with chocolate... and oats... so they are basically health food and are the perfect after dinner treat!

Makes: +/- 20 Cookies
Prep Time: 10 Minutes
Cook Time: 8 Minutes

INGREDIENTS:
  • ½ cup of melted butter
  • ½ cup of white sugar
  • ¼ cup brown sugar
  • 1 egg
  • 1 tsp vanilla bean paste
  • ¾ cup all purpose flour
  • ½ cup quick cook oats
  • 1 tsp baking soda
  • 1 pinch of table salt
  • 1 cup good quality semi sweet chocolate chips

METHOD
  1. Preheat oven to bake at 375.
  2. In a mixer, mix together the melted butter and both sugars until well incorporated. Add the egg and vanilla bean paste.
  3. Mix together the flour, oats, baking soda and salt in a separate bowl. Add to the wet mixture and beat until everything is incorporated.
  4. Add the chocolate chips and mix until they are just through the batter- you don’t want to bang up the chips!
  5. Drop heaping tablespoons (more like tablespoon and a half) onto parchment lined baking sheets about 2” apart. Give them a pat down so they are about 1/2" thick.

Bake each tray separately for 8 minutes. Let the cookies cool before removing them from the sheet.
